Description

A flavorful sweet potato taco bowl with roasted vegetables, seasoned turkey, fresh toppings, and a creamy lime-cilantro dressing.


Ingredients

  • 2 tbsp olive oil, divided
  • 1 lb ground turkey (or chicken)
  • 1 packet taco seasoning
  • 2 sweet potatoes, peeled and diced
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp chili powder
  • 1/8 tsp salt
  • 1 can black beans, rinsed and drained
  • 4 cups leafy salad greens
  • 1 bunch cilantro, chopped
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup plain Greek yogurt
  • 2 tbsp mayonnaise
  • 3 tbsp cilantro, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp lime juice
  • 1/2 tsp cumin
  • 1/41/2 tsp salt
  • Milk to thin, if needed

Instructions

1. Preheat oven to 425°F and line a baking sheet.

2. Toss sweet potatoes with oil and spices, roast 25–30 minutes.

3. Heat oil in skillet, cook turkey for 5 mins, add taco seasoning, cook 10 more mins.

4. Whisk yogurt, mayo, lime, garlic, cilantro, cumin, and salt to make dressing.

5. Assemble bowl with greens, meat, sweet potatoes, beans, avocado, tomatoes, and dressing.

Notes

  • Can be made ahead for meal prep.
  • Customize with toppings like pickled onions, hot sauce, or cheese.
  • For vegetarian version, use black beans or quinoa instead of meat.
